Thick Game Day Chili

My Utes are playing Indiana in the Foster Farms Bowl tonight, and here's what you're going to want on the menu. (Except, picture a sweet potato below instead of a Russet... my fave.)

Ingredients:

2 Tbsp. avocado oil

1 onion, diced

1 lb. grass-fed ground beef

1 package taco seasoning (or 4 Tbsp.)

1 tsp. salt

2 12-14.5 oz. cans stewed tomatoes

1 6-oz. can tomato paste

2 15-oz. cans kidney beans

Instructions:

1. Sautee diced onions in avocado oil until translucent. Add beef and cook thoroughly. Add taco seasoning and salt.

2. Add tomatoes, paste, and kidney beans and simmer on medium heat for 30 minutes.

3. Top with a dollop of non-fat, plain Greek Yogurt and a sprinkle of cheese if you'd like! I like mine best over a sweet potato. YUM.
